Recipe from the Farm Box: Using up tomatoes

Now Back to Your Regularly Scheduled Programing!

I've been slacking, dear sweet readers, The Box ingredients have been piling up in my Fridge and on my counter and some of them have gone to that sweet sad place, the trash, because of my neglect. So when The Husband walked through the door, The Box in hand,  I knew the goal was, this week, to get rid of some of the items I have in over abundance. Here is what I got:
  • Dinosaur Kale
  • Celery
  • White Eggplant
  • Red Tomatoes
  • Heirloom Tomatoes
  • Cucumbers
  • Zucchini
  • NY White Garlic
  • Leek Flowers
  • Peaches
Dear sweet reader, that brought the Zucchini count to at least 4 big fatties in my crisper drawer. The Green count to One HUGE bunch of Swiss Chard (about to go bad) and two kinds of kale. Three fat cucumbers, and an EXCESS of Tomatoes. This weekend will be about cleaning out my fridge BEFORE things go bad. The first step, USE UP SOME TOMATOES, and I know exactly how to do that.

Chopped Challenge: Pita Pizza?

This was one of those weeks where I feel like I never really stopped rushing about. Added to the fact that even though I was rushing about, this week took FOREVER. How is that even possible, dear reader, that I could feel like I haven't sat down all week and yet the week just stretched on. So when The Farm Box came, I barely looked at it except to say "oh great... kale."
Needless to say, when The Husband brought home this week's basket, I just wanted to make something quick and easy. I was hoping for an obvious stir fry. Something yummy but FAST, with a good deal of mindless knife work. What I actually got was the following:
Bing Cherries, Pita Bread, Sugar Snap Peas, and  crazy spicy chicken sausage. I took one look a the Pita bread and thought. Frick it, I'm making Pizza.

Chopped Challenge: Sometimes It's just not interesting

So I have been trying to be REALLY original with my Chopped Challenges. I've been working on upping my flavors, and being creative, and meeting the challenges head on. Unfortunately, the honest truth is sometimes the food that results, just isn't that interesting. I mean, it's edible and all, but boring, ho-hum, despite what the basket may have contained. And you know what is REALLY hard to write about? Boring food. Take last week for example. The Husband brought me home the following:
Dragon Fruit, Pork Chops, Tomatillos and Dried Edamame.  The ingredients seemed so exotic that I was eager to dive in. But the surety of what to do was lacking and the best I could come up with was to slice the chops thin, pound them out, crust them with edamame and some cumin and give them a good fry. Then I made a gravy with the Tomatillos (roasted slightly along with garlic, onion and a hot pepper) and the dragon fruit, which, although it looks pretty, tastes like barely sweetened water. I just kept adding and adding the fruit to the sauce, and then reducing it down as much as I could but no matter what I did, it just wasn't interesting.

In a desperate effort to do something creative I took the Parsnips from the Farm Box and tried to make parsnip fries. The only problem was the Parsnips from the box were too thin and not conducive at all to slicing into even fries. The Result: burned parsnip fries, only a handful of which were worthy of the plate.

In the end, my pork chop was dry, the breading to meat ratio was off with way to much breading to meat. The Sauce tasted interesting, but not yummy and mostly bland. The parsnip fries were overcooked and lacked seasoning. And the overall image, brown on brown on white. Not at all what I wanted.

This was a very frustrating meal. Unworthy of even writing down the recipe. But Failures come with the territory when you are cooking without a plan and when you are dealing with new ingredients. Every now and then you either eat the result despite it being lack luster, or if it is truly bad, that is why God invented Pizza Delivery Men.

Recipe From the Farm Box: Just Like Grandma Made It

My Grandmother was a saint. When I say Grandma Jenny was a Saint I don't mean she was a good person, I mean she is a literal Saint. Saint Jenny, at least she is well on her way. She was the Matriarch of a very Italian family. As smart as they come, never had an unkind word to say, deeply committed to her faith and her family. When she died in 2010 I knew that if she was right and there is a heaven, a god, and god had a son named Jesus like she believed so truly, then Grandma Jenny was up there talking his ear off while she watched our family grow. I miss her a lot. But her faith, her love and her intelligence isn't what convinces me she is on her way to sainthood. See to become a saint, in accordance with the Catholic Church, you need to perform at least two posthumous miracles, meaning from beyond the grave. And I know for a FACT my Grandmother already has ONE under her belt.

You see my extended family owns a house in Seaside Heights. This house is beloved by all who have spent many a summer there, and although my Grandfather and his brothers built it with their own bare hands it is fair to say that, well, it's a shore house and it's a little rugged. The shore house is a block from the Boardwalk, really prime location.  But when Superstorm Sandy Hit in 2012, the family was SURE it was gone. More modern homes had succumbed and squashed to nothing. The House had had a good run, we were prepared for the worse, but anxious for news. It took a while for the authorities to allow access to the Island, but when they did, wouldn't you know it, that old house was still standing. And more than that, it was standing with NO damage. Two blocks down, flooding, two blocks the other direction, wind damage, homes destroyed, millions of dollars of devastation, but our little shore house apparently stood its ground. Not even water on the first level and this year we celebrated its 50th anniversary. It was a miracle, I know it, and only one person had the love capable of preserving something so dear to the family she loved so hard, and that was my Grandma. Now I just need to keep my eye out for Miracle number 2 and I'll be direct dialing the Pope.

Anyway, ok dear reader, why am I, this little Jewish girl, telling you this story? Well because it's an awesome story, and so that you can understand why the simple recipe that follows remains one of my favorites. And it is deliciously created with only a few simple ingredients. One of which, is Broccoli.

This is why you do your research

This is one of those weeks where even though it is only TUESDAY and yesterday was only MONDAY I already feel like I don't have enough time for anything ever again. It's probably because The Husband and I have a fully booked August, and I am not quite sure if I am ever actually going to get around to watching all the TV currently building up on my DVR. Hypothetically I know it will slow down eventually but for now it feels like rush, rush, rush. Anyway. Last night The Husband walked in quite late with the Farm Box in his arms. Actually in a Large Bucket in his arms. Apparently our Farmer has been over feeding his crops. I mean some of this stuff was HUGE. And all really exciting. It makes me want to cook for days. Here's what I got:
  • Chard
  • Hungarian Hot Wax Peppers
  • Parsnips
  • Broccoli
  • Heirloom Tomatoes
  • Red Tomatoes
  • Cucumbers
  • Zucchini
  • NY White Garlic
  • Blackberries
  • Sweet Basil
Oh man do I really just want to bake and cook for the rest of my life. And everything was so OVERSIZED. The Zucchini looks like it was trying to escape the farm by growing weird and large. The Blackberries were fat and plump. The Heirloom tomatoes barely fit in my two hands. The Chard was as big as my head, at least and a gorgeous hot pink. And the Parsnips had greens attached that were at least 3 feet long. 

As I am going away this weekend, I wanted to try and make sure my produce lasted as long as possible. So I was doing some research on storage. One of the things I wasn't sure about was the Parsnips. I figured, since they were attached, that the greens were edible and was wondering if I should store them separately or still attached. Of course it didn't take me long to learn my mistake. Parsnip greens are NOT edible. I repeat NOT EDIBLE. This is why you research folks. Not everything that comes from the ground is safe for eating, no matter how pretty they are. Ah well, into the trash they go.

Chopped Challenge: Today we are FRENCH.

The strange things about these Chopped Challenges, isn't just the basket ingredients. It's that I am starting to worry that my skills are about to hit their limit. Cooking without a recipe requires more then a basic ability to pair flavors together, it requires a knowledge of techniques. And although I watch more cooking shows, read more blogs and listen to more podcasts on cooking then I would care to admit, I don't actually have the breadth of knowledge necessary to make any grand idea come into formation on the plate, even though I may have seen the technique once or twice.

This is especially true when it comes to Baking. Where cooking is a art, baking is a science, and it takes a lot of repeat baking to learn what in a recipe is REQUIRED and what is merely window dressing. Ratios are INCREDIBLY important. Even the order that ingredients are added can matter. I like to bake, but it would be a cold day in hell before I baked without a recipe. Unfortunately, there are certain basic baked goods I would like to be able to use when The Husband sets a basket in front of me. So, yesterday, I spent a good 2-3 hours reading, and re- reading and memorizing various ratios for.... pie crust. Why you ask? So that when The Husband sat The Basket in front of me on Monday, I already had an idea in my head as to what I was going to do with it.

Recipe From The Farm Box: Infusions

This Week's box brought forth an abundance of Veg fit to be consumed. But once again, nothing in particular screamed "make a recipe with me." Most of it was just "useful". Here's what I got:
  • Curly Kale
  • Tomatoes
  • Lemon Cucumbers (Looks like Lemons, is a Cucumber)
  • Alexandra Heirloom Zucchini (is what that big ugly thing from last week was)
  • Mixed Potatoes (Red, White & Blue)
  • Eggplant (long and thin)
  • Chives
  • Lemon Basil
  • Lime Basil
So we're in the swing of Zucchini season, which is nice because it adds well to most basic dishes disappearing into the background but adding some texture and fiber where needed. Also fun are the Mixed Potatoes, which will sit until I am ready to use them. Everything else. I mean useful, but nothing really screaming USE ME. My only problem is that Lemon Basil and Lime Basil don't exactly stay. They tend to go bad immediately. I knew I needed to do something with them to capture those truly amazing basils but I wasn't really sure what. Until I remembered something I had consumed in a fancy rooftop bar in washington DC... Infused Liquors. I remember the bartender talking me up about his own PERSONAL infusions as he served me a cucumber gin martini. It was delicious. The flavor breaking highlighting the gin. And so I thought, if you can do that with cucumbers, could you do it with herbs? Could I infuse The Husband's booze of choice, gin, with the basils and make my own unique PERSONAL infusion.

Chopped Challenge: The Lamb that Almost Was, but Wasn't

This week The Box arrived with a wide variety of familiar goodies and a couple of strange ones. Nothing exactly made me want to jump up and down and cook like a mad woman, but for the most part the ingredients were useful. Here's what I got:

  • Sorrel
  • Orange Sun Gold Cherry Tomatoes
  • Texas Onions
  • Elephant Garlic Rounds (basically one big clove of garlic)
  • Cucumbers
  • Mammoth Basil (Looks like Basil, Smells like Basil, is 2X the size of Basil, I called it Mega Basil)
  • Italian Sweet Basil
  • Elephant Garlic Flowers (big fluffy purple flower thing)
  • Something that looked like a Zucchini and a Eggplant mated
  • And Purslane (because MIL thought it would be funny.....THANKS)
Again, we had some odd ducks, like the Purslane, which is essentially a weed, and sorrel, which is poisonous in large quantities. But nothing screamed "COOK ME" so I was looking forward to what was in the big brown basket sitting on the counter. It could have been anything. And I was hoping to get a nice fat, blood pressure rising challenge. So when I opened it up and looked at the ingredients I was perplexed.

Chopped Challenge: Fit to be stewed

After what felt like one of the longest weeks of my life it was finally Friday. I was looking forward to a weekend of relaxation and nothingness only to find it fully booked. Our only free night was Friday and as such it was The Husband's only opportunity to get in a Chopped Challenge this past week. Fortunately I got home early to find him squirreling the basket ingredients away. Not wanting to waste any of my precious free time I opened up the basket and took a look-see.

Recipe from the Farm Box: Collard Greens

Some days your best laid plans turn rotten and die. Some weeks are made up of those days. This week The Husband and I got side tracked by jobs and life and Thursday was my first opportunity to actually cook something. The Husband was going to bring me a Chopped Challenge and I was looking forward to it. Unfortunately he ended up having to work late and that left me to my own devises. Without knowing when he was going to be home I wanted to make a meal that could be prepped in advance and come together quickly when he walked in the door.  The collard greens had really struck my cooking soul, but I didn't really want to sit around waiting for them to braise.  Nor did I really have a desire to fight with bacon. So I began my search on the internet for something light, fresh and quick.

Week 3 Box 3

The Husband and I went on our annual pilgrimage to Cape Cod this weekend to celebrate the 4th with his side of the family. We drove up Thursday night literally in the first band of rain and wind from Hurricane Arthur. It was terrifying. Everyone around us was driving at 35mph on the highway with their hazards blinking. There weren't even that many people on the road but the wind and the rain was so intense, I spent at least 2 hours of the drive trying to convince The Husband that it was time for us to find a hotel room and hunker down. He remained unconvinced and we made it up there in a respectable 5.5hrs.  An hour better then last year when I drove myself up in basically bumper to bumper traffic. I am starting to think The Cape doesn't want me.

Friday, Hurricane Arthur passed over us in our sleep and we awoke to beautiful weather with temps in the high 70's and low humidity. Are you Jealous?


Needless to say I didn't  cook all weekend. We ate well, we drank well, I made Mojitos with the chocolate mint that came in the box last week and read my way through a really good book (The Son by Philipp Meyer - A fantastic novel about a family throughout the generations in the Texas frontier from 1800 - the present. This book comes with a MAJOR trigger warning and can be descriptively gory, but is worth the read). The vacation was exactly what I needed. We got  back late monday night to  boiling house, put the AC's on and passed out.

On Tuesday The Husband brought me home The Box. And while I was excited for it, I was exhausted and in no mood to cook. The Husband suggested a salad or something simple, but even that seemed like punishment for my tired body. So when my Father showed up with a pizza for him and my grandfather, it felt like being rescued on a white horse of sauce and cheese. Yummy. I went to bed early with a fully tummy, but don't worry I took the time to take a picture of my haul from this week. Here is what we got :
  • Swiss Chard
  • Collard Greens
  • Fava Greens (my favorite!)
  • Cucumber (big fat and happy)
  • Garlic Curls (what the hell am I going to do with all of these?)
  • Green Onions
  • Blue Potatoes (YAY!)
  • Lemon Basil 
It's nice to have some creative products to work with. The Chopped Challenge is being delivered to me on Thursday. Here is hoping it's not too difficult, but knowing The Husband... we shall see.

Week 2, Box 2 and I Want My Baby Back

This week The Box arrived with little fanfare and stuffed to the brim with mostly salad greens. That's the way it is in the early weeks, you get garlic curls and salad greens. Nothing TOO exciting. I hope things ramp up soon because as much as I love the abundance of green on my plate and in my fridge, it's extremely difficult to keep everything from wilting away before we get the chance to eat it. Let's see what we got this week:
  • Red Lettuce (Went to my grandfather)
  • Escarole (Also went to my grandfather)
  • Turnip Green Thinnings 
  • Looseleaf Chinese Cabbage
  • Tomatoes
  • Garlic Curls
  • Herb of The Week: Basil & Chocolate Mint
The basil and chocolate mint sound interesting. Mojito's anyone?

After putting everything lovingly away I turned my attention to the dreaded basket ingredients which The Husband had the pleasure of bringing home to me. I wondered, briefly, what was in store for me. Bison? Quail eggs? Some unknown spice from the far east ::cue belly dancing music::. After my success last week I felt a little bit more confident, until I opened it up.

Recipe from The Farm Box: Bok Choi

I do the cooking. I like it. The Husband makes an excellent sous chef and will occasionally suggest recipes to try, he's also excellent at grocery shopping, but when it comes to the day to day meal planning and putting dinner on the table, I do the cooking. It's a creative outlet for me after a hard days work of analytical thinking and dealing with other people's problems. Plus it has the added benefit of being the only "art" where you have the opportunity to make not only your eyes but your mouth happy. Not that I am always successful at that.

The only area that The Husband has true dominion (aside from breakfast which I acquiesce because I would rather sleep then fry bacon), is the grill. There is something about cooking over a grill which is just plain intimidating. And I know that there is something shameful about this. I should be perfectly capable of using a grill. There is no special magic about it, it certainly isn't any more difficult then making fresh pasta or baking bread from scratch and I approach those tasks with joy at the challenge. But the grill simply fills me with dread.

However, I am eager to overcome this fear so when I found THIS recipe I decided to accept the challenge before me and instead of an introduction to the grill being the confusing steamy world of hamburgers or steaks, it would be that fresh delicious green known as Bok Choi.

Week 1, Box 1, 4 Basket Ingredients....

Welcome to the spectacle everyone! Step right up and watch the disaster in progress. For Monday I received my very Farm Box of the season! A little late due to a cold and late spring but super bountiful. Of course the vast majority of this first box is salad greens, and therefore slightly un-creative, but we've got some goodies too so let's dive in!
This week's box contained the following:
  1. Red Lettuce (which went to my Granddad who was thrilled to see it)
  2. Green Lettuce (Ginormous) 
  3. Half a Bok Choi (the other half taken by the MIL)
  4. Micro Greens
  5. Rhubarb
  6. Two Tomatoes
  7. Garlic Curls  (those curly tops of the garlic that gave me such a heart attach last year)
  8. And Garlic Chives (which are neither garlic nor chives, but still yummy)
I was already making plans in my head, the Rhubarb is OBVIOUSLY being turned into Jam again because it came out so yummy last year and I know I only get it once, twice if I am lucky. Salad greens to be washed up and made into salads (Duh) and I was getting really excited about the Bok Choi when a sadistic smile on The Husband's face reminded me that in my joy in finally having my farm fresh produce back, I had forgotten something...My basket ingredients.
is that, Kiwi? Yes yes it was, and wasabi peas, AND apple chips... not to mention A WHOLE FRIGGEN CHICKEN.

Mastering the Farm Box... Chopped Edition

Hello everyone and welcome back! The Husband and I are expecting our first Farm Box delivery next Monday, and now that I am no longer a major Newb, I am ready to take it on with full creativity and decisiveness. Of course this as led to The Husband deciding that it was time to throw in a nice little twist for me to handle. You see, Dear Reader, in the past year The Husband has changed jobs and he now works as a sales representative for a Major Food Company. This means he is in and out of grocery stores all over the local area, in all kinds of neighborhoods, with all kinds of primary ethnicity and backgrounds. The twist he proposes is to bring home with him the odd, unique and terrifying ingredients he finds while out and about and require me to incorporate the ingredients into the dishes I decide to make. It's Chopped in my home kitchen, except without eliminations and The Husband has to taste the end result.


Here are the Rules:
1) The Husband will bring home 1-3 "Basket" ingredients.
2) I must use all of the Basket ingredients in one dish.
3) I may NOT use the internet to look up a recipe, we're cooking off the top of our head.
4) The Husband MAY use the internet to advise me and answer direct questions, specifically so I don't accidentally kill us by preparing an ingredient wrong.
5) I have access to our pantry and fridge which will be kept well stocked.
6) I also have access to The Box and may use anywhere from 1-all of The Box ingredients

Sounds like fun huh?
Frankly I am terrified. I have a week to read up on culinary techniques and get ready for this mess.
